Church Window Christmas Icebox Cookies

I LOVE EVERYTHING about these cookies!

Not only are they easy to make, but their lovely to look at and most importantly they are oh so yummy.

As The Sidekick says "they are like Christmas Cake only they're sugar cookies"... and she's right! It's the perfect combination of sugar cookie and citron fruit and cherries.

Leave it to Martha Stewart to make up the magic in the first place - with her "one-dough 30 cookies" feature in the Martha Stewart Living 20th Anniversary December IssueMartha calls them "Candied-Fruit Squares" but we love how the different colours of fruit make them seem like the pretty windows in our Chester Church.  No matter what you call them - you'll want to bake them up this Christmas!

I love that you can make a big batch and then pop them in your freezer - so that when anyone comes over the holidays (or you're asked to bring something baked) you are ready to slice and bake! They also make for a wonderfully colourful gift in a sweet glass cookie jar with the recipe attached - just as we showed in you in our 2017 Christmas Segments.


3 cups all-purpose flour

3/4 teaspoon baking powder 

1/2 teaspoon salt

2 sticks unsalted butter

1 cup sugar

1 large egg

2 teaspoons pure vanilla extract

3/4 cup chopped candied citron

3/4 cup glaced red and green cherries

Whisk together flour, baking powder, and salt in a large bowl.

Beat butter and granulated sugar with a mixer on medium-high speed until pale and fluffy.

Beat in egg and vanilla. Reduce speed to low.

Add flour mixture, and beat until combined.

Once the flour is incorporated according to dough recipe, beat in citron and cherries.

Divide dough into 2 pieces. Shape each into a 10-inch-long square-shaped log.

Wrap in parchment. Refrigerate until very firm, about 2 hours.

Slice dough crosswise slightly thicker than 1/8 inch. Reshape if needed.

Bake at 350 degrees on parchment-lined baking sheets until firm, rotating sheets halfway through, 12 to 14 minutes.

This dough can be refrigerated over night or as noted above frozen for up to 1 month.

While you can certainly buy the candied citron and cherries separately - I was beyond busy when I came upon a tub of the whole deal chopped and combined!  What it loses in terms of variety of cherry sizes it more than makes up for in terms of time-savings!
