TURKEY CREOLE

From the kitchen of awesome Atlantic author Jo Ann Yhard comes the perfect solution to supper time this Boxing Day and beyond!

“This has been a tradition during the week after Christmas dinner for our leftover turkey for as long as I can remember. It’s such a different taste and that makes it the perfect meal after all the potatoes, stuffing, cream sauces and such. Absolutely delish and everyone always wants the recipe. Great to take to a pot luck, and chicken can be used instead of turkey. Have a lovely holiday! 🙂 Jo

½ cup diced red or green pepper

1 tsp sugar

½ cup diced celery

½ tsp salt

½ cup diced onion

1-2 fresh cloves garlic

1tbsp olive oil

2 bay leaves

1tbsp flour

dash pepper

1 cup tomato sauce

2-3 dashes hot sauce (or more to taste)

2 cups diced canned tomatoes

1 lb cooked turkey (chopped)

In dutch oven cook pepper, celery, onion and garlic in oil until tender.  Make paste with flour and 2 tbsp of tomato sauce and set aside.

Add remaining ingredients (except turkey) to pot.  Add paste mixture.  Stir until thick and bubbly. Add turkey and simmer 10 minutes.

Serve over hot rice, makes 4 servings. Enjoy!!!
