There Were Monkey's in My Kitchen by Sherre Fitch illustrations by Sydney SmithLeave it to the always brilliant and creative Sheree Fitch to deliver a holiday recipe that’s as fun to make as it is to eat.  Sheree’s mom (a native of Sussex, New Brunswick) would always make this for the family at Christmas time and it was Sheree’s favourite for sure!

We thank you for sharing Ms. Fitch…we're only surprised you manage to get any cooking done with all those monkeys in your kitchen 😉

1/2 c. butter (1 stick)
6 oz. pkg. chocolate bits
1 egg
1 c. confectioners' sugar
4 c. coloured miniature marshmallows
1/2 c. (or more) chopped nuts ( walnuts)
1/2 c. coconut

Melt butter and chocolate bits together. Beat egg and confectioners' sugar together and then add the butter and bits mixture. Add marshmallows and nuts. Put all in a bowl and refrigerate for 20 minutes. Then dump onto a piece of wax paper and shape into a log. Roll it into shredded coconut. Refrigerate. Slice and eat!

SHEREE FITH photo by Kate Inglis"Upon making... I discovered less marshmallows and more nuts in my kitchen -- I used walnuts and pecans, but it is delicious. The longer it sets in the fridge the better...and cutting it in two is nice because you can give one away." SF

  1. This looks like it is going to be a LOT of fun to make with our two grand daughters. And then to munch on whilst we read a certain book one of them is being given for Christmas...a very appropriate book after spending the day in the kitchen with two of the best monkeys I can think of. Thank you for sharing....VERY much.
