Curried Apples

Kelley Edwards has a unique dessert that features all those delicious apples that are so abundant during the harvest season.

Simplicity with an unexpected twist... that's what makes this dessert such a hit!

Curried Apples

KELLEY EDWARDSI enjoy making and serving this dish. There are so many ways it can be varied as well.

Sometimes I will use strawberry yogurt instead of plain, to pump up the fruit flavor. I prefer Granny Smith because the tartness balances out the sweetness from the brown sugar, but it's also nice to have a mixture, and sometimes I'll even add pear, dried cranberries or walnuts. The curry provides a wonderful surprise.

1/2 cup butter

1/2 cup brown sugar

2 teaspoons curry powder

1/2 cup plain yogurt

4 apples, peeled cored and sliced

Curried Apples 3Melt the butter in a nonstick frying pan, then add the brown sugar. Stir together, mixing well.

Add yogurt and curry powder and cook on medium heat until it begins to bubble.

Add the apples and cook until they are soft.

serving & tips
