Glo’s High Fibre Bread

Glo McNeill - recipe photoI can tell you from first hand experience - this is wonderful bread!!!  And how lucky for me that I got to try it in Glo McNeill's Lunenburg, Nova Scotia home.

I even got to top it off with her homemade blueberry preserves - sweet!

3 cups whole wheat flour

½ cup oatmeal

½ cup bran (wheat or oat)

½ cup 12 (or 7) grain cereal

½ cup cracked wheat

1 tsp baking soda

2 + ½ cup fat free plain (or vanilla) yogurt

2 tbsp honey (or brown sugar)

2 tbsp seeds (poppy, seasame, flax)

½ tsp salt

  1. Lightly spray a medium sized loaf pan with vegetable oil
  2. Mix all ingredients together gently but thoroughly, until there are no dry bits left
  3. Pour into pan. Smooth top and sprinkle with a a few more seeds
  4. Bake at 350 degrees one hour or until firm

Try part yogurt and part buttermilk.Vanilla (fat free) yogurt is also good

You can use Stevia instead of honey or brown sugar to save calories

If it drops a little in the middle after baking, next time use a little more flour. Flours differ in absorbency. Or try a different type of yogurt, some are more liquid than others.

Try adding caraway and flax seeds…use slightly more if liked

I wrap the loaf tightly in saran and store in the fridge.  It slices better after 24 hours

Freezes very well
