Strawberry Walnut Torte

Strawberry Walnut Torte

 Whenever Halifax teacher Doug Jarvis is asked to make dessert, he has a few favorites that he can choose. This one for Strawberry Walnut Torte is always a hit.

3/4 cup flour
2 tsp baking powder
1/2 tsp salt
1 cup ground walnuts (can substitute hazelnuts if you prefer)
4 egg yolks
2 tbsp water
1 tsp vanilla
3/4 sugar
4 egg whites
1/4 cup sugar

Filling and Glaze
2 cups whipping cream
1/4 cup icing sugar
1 jar junior strawberry baby food
1/2 cup strawberry jam
2 tbsp chopped walnuts

Combine flour, baking powder, salt and nuts in a mixing bowl. Stir well to blend. Beat egg yolks, water and vanilla in a small mixer bowl until thick and light.
Gradually add 3/4 cup sugar, beating until thick and light. Beat egg whites and 1/4 cup sugar to stiff peaks. Fold dry ingredients into egg yolk mixture in 4 portions. Gently fold in meringue. Spread batter evening in 2 round greased pans.
Bake a t 350 for 25-30 minutes or until toothpick inserted in center comes out clean.
Cool 5 minutes in pans then remove and cool completely.

Filling and Glaze
Beat cream and icing sugar to stiff peaks. Fold in strawberries. Split cake layers in half horizontally. Fill with strawberry cream filling.Glaze with strawberry jam.

seriving and tips

Garnish with nuts if desired.

Chill until serving.

  1. I personally prefer to use hazlenuts (filberts) in this torte and my wife's homemade strawberry jam.

    It was originally an almond apricot torte which I found too bland so adopted to strawberry and hazelnut.
