Mediterranean Pasta

Tanya does get away to 'somewhere warm' each year where she often finds healthy meal inspirations like this yummy pasta dish.

1/2 red bell pepper,
1/2 green bell pepper
1/2 yellow pepper
1 can artichoke hearts
1 can chunky diced tomatoes with sweet onion
1/2 vidalia sweet onion thinly sliced
12 kalamata olives
1 package reconstituted sun-dried tomatoes sliced
1 bottle PC tomato sauce with mushrooms
1 small-medium zucchini diced
1 pkg Catelli Smart pasta rotini
salt and pepper to taste
1 tbsp oregano
1 tbsp olive oil

*chicken breast or hot Italian sausage

*Goat cheese, crumbled

Boil pasta according to package directions.

Meanwhile, in olive oil, (*brown chicken or sausage at this stage if using it) saute peppers, zucchini, artichoke hearts, onions and olives in a large pan until softened and beginning to caramelize.

Add diced tomatoes and pasta sauce.  Season with oregano and salt and pepper.

Drain pasta.  Add pasta to vegetable mix.  Mix well,

(*add goat cheese at this point is using)  and serve hot.

Serves 8
