HEALTHY BANANA CHIP MUFFINS

This recipe comes from the kitchen of Maureen Walsh.  That's her smiling face above at her home in Witless Bay, NL.  A lifetime resident of the Southern Shore, in addition to being a wonderful cook - she's a member of the St.Patrick's Church choir and plays a mean accordion.

Maureen told me about these muffins just a few days ago when we were talking about the 'fresh start' series.  They are one of her son Gary's favourites, and even after cutting the listed cup of sugar in half - they still taste truly scrumptious.  Can't wait to bake 'em.

1 cup white sugar*

1/2 cup vegetables oil

2 eggs, beaten

1/2 tsp baking soda

1/2 tsp salt

2 ripe bananas

1 cup chocolate chips

1/4 cup orange juice

1/4 cup vanilla yogurt

2 cups flour

Line muffin tin with baking liners and set aside

Mix sugar and vegetable oil, beat well.

Add beaten eggs, bananas, yogurt and juice (beat well).

Add the rest of ingredients together and blend well.

Put batter into prepared muffin tin

Bake at 350 degrees until done (approximately 20 minutes)

As noted in the intro you can cut your sugar in half - using only 1/2 cup of white sugar and the muffins will still taste yummy.
